After enjoying the breakfast in the garden amongst the vines, we continued our day by the pool at La Bastide de Marie. The hotel features two stunning pools, but since it was already October, we only swam at the heated pool, situated right at the entrance of the estate. The second lies opposite the vines and merges beautifully with the greenery. Springing up like a pond, it has been restored in the spirit of the two original reflecting pools.
Besides taking a dip in the pool, we also decided to sip some divine rose of the hotel’s own vineyard. The 57 acres of Le Domaine de Marie cultivates its vineyards among the four different soils. Each of them with their own microclimate as well as its structure of ground and a different exposure, enabling the winemakers to play with the quality and the aromatic subtleties of every soil during the elaboration of wines. We also had a closer look at the factory and the ageing cellar itself that is located right next to the hotel. The winery Domaine de Marie uses the latest technological innovations: - the reception of the harvest. Making use of gravity, it allows a smooth arrival of the grapes to preserve quality, which are then is then grazed and trampled. Le Domaine is equipped with stainless-steel tanks and wood tanks, which are thermo-regulated, for perfect control of fermentation temperatures. With the new addition to the cellar with new oval concrete tanks for the vinification of white wine, also allows for full temperature control. I wish we would have stayed longer at this stunning 15-room boutique hotel, since we didn’t have a chance to try their cool electrical bikes neither did we test their relaxing spa. But you must leave some things undone, so you have even more reasons to return to this heavenly place..
